Ingredients

  • Chunky chicken pieces (diced chicken thigh or breast)
  • 1 onion, diced
  • 2 cloves garlic, minced

  • 1 chicken stock cube
  • Water
  • 1 teaspoon cornflour
  • Cold water (for slurry)
  • 1 sheet puff pastry
  • Olive oil spray or melted butter (for pastry)

Method

  1. Preheat oven to 180 °C.
  2. Heat olive oil in an oven-safe pan over medium heat. Cook onion and garlic until softened.
  3. Add chicken pieces and cook until lightly coloured on all sides.
  4. Add frozen mixed vegetables and stir to combine.
  5. Dissolve the chicken stock cube in water and pour into the pan until the chicken and vegetables are mostly covered.
  6. Simmer for 10 minutes, until the chicken is cooked through.
  7. Mix cornflour with cold water to form a slurry. Stir through the filling and cook until thickened.
  8. Remove pan from heat. Lay puff pastry over the filling, tucking in the edges.
  9. Lightly spray pastry with olive oil or brush with melted butter.
  10. Bake for 25 minutes, or until pastry is puffed and golden brown.
  11. Allow to rest for a few minutes before serving.
