Ingredients
- Chunky beef pieces (diced chuck or gravy beef)
- 1 onion, diced
- 2 cloves garlic, minced
- Olive oil, for cooking
- 1 × 1 kg bag frozen mixed vegetables
- 1 vegetable stock cube
- Water
- 1 teaspoon cornflour
- Cold water (for slurry)
- 1 sheet puff pastry
- Olive oil spray or melted butter (for pastry)
Method
- Preheat oven to 180 °C.
- Heat olive oil in an oven-safe pan over medium heat. Cook onion and garlic until softened.
- Add beef pieces and brown well on all sides.
- Add frozen mixed vegetables and stir to combine.
- Dissolve the vegetable stock cube in water and pour into the pan until the beef and vegetables are mostly covered.
- Simmer for 10 minutes.
- Mix cornflour with cold water to form a slurry. Stir through the filling and cook until thickened.
- Remove pan from heat. Lay puff pastry over the filling, tucking in the edges.
- Lightly spray pastry with olive oil or brush with melted butter.
- Bake for 25 minutes, or until pastry is puffed and golden brown.
