Frozen snapper portions are gently thawed, carefully dried, and lightly seasoned before being cooked in the air fryer. Cooking the snapper skin-side up allows the fish to cook evenly without drying out. A small amount of oil and simple seasoning is all that’s needed during cooking. Ingredients

  • frozen snapper portions
  • Olive oil spray
  • Salt, to taste
  • Cracked black pepper, to taste
  • 1½ teaspoons butter (½ teaspoon per serve)
  • Seasonal vegetables of choice (e.g. broccoli, carrot, beans, cauliflower)

Method

  1. Thaw snapper portions by soaking them in room-temperature water while still in the plastic wrapping.
  2. Once thawed, remove snapper from the plastic. Lay skin-side up on three layers of paper towel, place another three layers on top, and leave for 5 minutes.
  3. Turn over and remove paper towel from the flesh side.
  4. Spray lightly with oil and season with salt and cracked black pepper.
  5. Place snapper in the air fryer skin-side up. Spray lightly with oil and season again.
  6. Cook at 180 °C for 12 minutes, or until cooked through.
  7. Cook vegetables: Prepare seasonal vegetables to your liking while the snapper cooks.
  8. Plate snapper with vegetables. Place ½ teaspoon butter on each snapper portion and finish with cracked black pepper.

Pro tip: The drier the skin, the crispier, and for even cooking when using the air fryer shelf, stagger the pieces to allow max air flow. Avoid oiling the skin until just before cooking.
