Ingredients
- 1 small iceberg lettuce (or other light, crisp lettuce)
- 2 slices multigrain bread
- 1 cup tasty cheese, cubed or shredded
- 100 g bacon, diced or strip
- 2–3 eggs
- 2 small chicken breasts
- Caesar lite dressing, to finish
- Salt, to taste
- Cracked black pepper, to taste
Method
- Cook ahead: This chicken is best prepared well before the salad is ready to serve, allowing time to rest and cool.
- Prepare the chicken: Place the chicken breasts in the air fryer. Slice lengthwise along the centre line to a depth of about 1 cm (this helps the chicken cook through evenly).
- Lightly spray with olive oil, then sprinkle evenly with seasoning.
- Air fry at 180 °C for 15 minutes for the first 500 g, then add 1 minute per additional 100 g.
- Remove the chicken from the air fryer and allow it to rest and cool.
- Slice the chicken and place on top of the salad just before serving.
- Prepare the lettuce: Wash, dry, and roughly chop the lettuce. Place in a large salad bowl.
